Xylooligosaccharides (XOS) are polymers of the sugar xylose. They are produced from the xylan fraction in plant fiber. Xylooligosaccharides act as a prebiotic selectively feeding beneficial bacteria such as bifidobacteria and lactobacilli within the digestive tract.
