It has excellent stability, high gel strength, heat stable, sparkling clarity, outstanding flavor release, easily combined with other hydrocolloids and fluid gel suspension. Its could be using as aspics bakery fillings, beverages / fluid gels, confections, dairy products, dessert gels, non-standard jams and jellies, personal care and fruit preparations.
